Sifu Sabrina’s mother shares her stuffed duck feet recipe with me.

I jab the doorbell button of Sifu Sabrina’s condo and the door swings inward. My mouth dangles open! Sifu Sabrina is standing in the doorway, garbed in a see-through negligee dress.  Gee… I can see her black panties and the nipples of her full breasts on loan from Jessica Simpson. 


“Come on in.” A cheery smile skims Sifu Sabrina’s kissable lips. “It’s safe to leave your shoes outside.”

Two days ago, Sifu Sabrina phoned to ask whether I could feature her mother’s stuffed duck feet recipe in my blog. According to Sifu Sabrina, her mother won the Iron Chef Kuala Lumpur title in 2015. I agreed.

I catch a whiff of citrus and blueberry from Sifu Sabrina’s perfume as I step inside the living room.

Sifu Sabrina closes the door and patters away on dainty feet. "Come, my mum’s in the kitchen.” 

We cross the living room, the dining room and enter the kitchen. A silver-haired woman rises from an island countertop and waves at me. “Hello, I’m Suzanne.” Her voice is like that of an old mother hen's.

 I step toward Suzanne and extend my hand.  “How do you do?”

Suzanne pumps my hand, gripping it like an iron vice. Ouch! I wrench my hand away. Her hand feels like a bag of nuts and bolts! I sit down opposite her, pull out my MP4 player from my hip pocket and place it on the countertop.

“Give me your recipe first, then you can cook.”

Sifu Sabrina joins us at the countertop, sitting beside Suzanne. “Fire away, Mum!” She points to an oven with a red-nailed hand. “The duck feet are roasting in the oven.” 

I flick my gaze at Sifu Sabrina’s cleavage. My gaze moves upward to her lips, glistening red like fresh oil paint on canvas. My gaze shifts further up to her  mascared eyes and long eyelashes which need no help from Shisedo.

Suzanne raps the countertop with her knuckles. “Oei! Look here, please!”

I tear my gaze away from the bombshell with great difficulty.

“Sabrina, you better go change” Suzanne waves the leathery fingers of her mottled hands. “You’re distracting him.”

Sifu Sabrina goes away.

Suzanne clears her throat. “Now, let me get to the ingredients.

Twelve duck’s feet. Cleaned, washed and boiled until soft. Put them aside.

Twelve fingers of Chinese roast pork, each 6 cm.

Twelve strips of pork fat, each strip 6 cm.

Twelve fingers of Chinese turnip, each 6 cm. All parboiled and drained.

Several lengths of duck’s intestines. They should be washed and cut into 10-cm lengths for tying.” She allows the second hand on my wrist watch to tick twice.  “Now, for the seasoning ingredients.

1 ½ tablespoonful of cooking wine

2 teaspoons of dark soy sauce

1/4 teaspoon of monosodium glutamate

2 teaspoons sesame oil

3 tablespoons soy sauce

2 teaspoon sugar

1 tablespoon water.”

Sifu Sabrina returns to the countertop wearing a cropped T-shirt and sits crossed-legged on the chair.  I flash my gaze at her. She smiles. I smile back at her. I jerk my gaze back to the old gal.   


Suzanne continues,

“Method of preparation

Season the pork fat, turnips and roast pork in seasoning ingredients for 20 minutes.

Wrap a piece of roast pork, pork fat and turnip to the hollow of each duck’s feet and secure by tying with duck’s intestine.

Place all the stuffed duck feet on a roasting tray and roast for them for 15 minutes in an oven.

Baste them with the drippings.

Serve with drippings poured over it.”

I shift in my seat. “One question. Duck’s intestine is difficult to get. Any substitute?”

“Sausage skin can be substituted.”

“Thank you, Stuzanne.” I switch off my MP4 player.

An oven dings from somewhere in the kitchen. Eyes lighting up, Suzanne sniffs and rises to her feet. “Ah, my stuffed duck's feet are ready.” She waddles to the oven sitting atop a counter at one wall. “You can try them.” 


She returns to the island countertop with a platter of stuffed duck’s feet and puts it on top. The aroma of roasted meat swirls in the air and salts it.

Using a fork, I spear a piece, bring it to my mouth and chew on it.

Suzanne’s eyes brim with anticipation. “Delicious?”

“Sheesh! It’s tough, like leather! The duck's feet should have been boiled longer.”

Suzanne strides to a wall rack, grabs a frying pan off it and returns to her former spot. “What did you say?” Eyes glinting, she raises the frying pan with both hands, ready to use it as a club. "Tough? Don't you dare write this in your blog!" Her voice sounds like a tiger's growl. 

“Eeeek!” Sifu Sabrina shrieks. “Don’t, Mum!

My heart skips a beat. “Err, it’s excellent, crispy -– that’s what I meant. Full of flavour.”

The frying pan goes back to being a frying pan.  

Suzanne picks up a stuffed duck’s foot with her hand and, using her teeth, tears at it. Her top denture slips out of her mouth! “Oh my God!”  It drops to the countertop with a clatter, amidst the giggle of Sifu Sabrina, her eyes sparking with humour.

MasterChef Singapore 2014, Stephanie Sung gives tip how to buy cheaper fishes

"I go to the market once a week to buy mackerel for my cats," I say to Stephanie Sung (right pix), winner of MasterChef Singapore 2014. "The price always fluctuates. How can I know when prices will be cheaper?"

"Avoid buying sea fish on and around the 15th day of every Chinese lunar month," says Stephanie with a cigarette clamped in her mouth. "When the moon is shining, the fishes avoid swimming near the water's surface. Since less fishes are caught by the fishermen, they sell at higher prices to the wholesalers."

MasterChef Madelyn serves me bull penis soup and reveals her secret recipe

I ring the door bell and the solid nyatoh door swings inward. Standing in the doorway is MasterChef Madelyn Miao (left pix), the 2013 winner of MasterChef Beijing, who hails from Shanghai. “Ni hao!” she says, flashing a smile revealing pearly white teeth. “You’re on the dot. I just took out the ingredients from the pantry.”

“Thank you for inviting me to try your bull penis soup,” I say, slipping off my sneakers. “How’s your cookbook coming along?” I step inside the studio condo, feeling cool air from the air-conditioner caressing me.

“Just halfway through.” She waves me to the dining table with a glass top and legs of wrought iron. “I will need you to edit it for me.”

“It'll be my pleasure." I settle down on a high-back metal chair and Madelyn sits opposite me.

“I’ve written down the ingredients of the bull penis soup for you.” She digs out a folded piece of paper from her cleavage, and my eyes nearly pop from their sockets. “Here it is!” With a smile, she hands the paper to me across the table.

As I unfold the paper, I catch a whiff of perfume and read the handwritten words mentally.

INGREDIENTS:
Bull penis 0.5 kg
Wolfberry (kay chi) 10 grams
Angelica sinensis (dong kwei) 10 grams
Dried black dates 10 pieces
Plain water 1.7 litre
Salt and pepper to taste

“Perfumed paper, hmmm….nice smell,” I quip as I take a sniff, fold the paper lengthwise, fold it crosswise and put it into my shirt pocket.

“Come, let me show you how to cook it.” She leads me to the small kitchen with wall shelves on three sides. As she works, she explains aloud in her melodious sugary voice.

“First, put the pot of water on the stove.” She puts the wolfberry seeds, angelica sinensis slivers and black dates in a colander and rinses them under a flowing tap for several seconds. “Wash all ingredients and dump them in the pot.” She goes to the fridge, opens the door and bends over. My jaw drops. Straightening up, she turns round to face me and dangles something like a sausage between her thumb and forefinger. “Here’s the bull penis.” She giggles. “Six inches long!” She places it on a chopping block, takes out a knife from a drawer and starts to slice it. “Now cut it lengthwise along the urethra.” She steps to the sink and douses the bull penis thoroughly with running water. “The urethra must be washed carefully to


get rid of urine and urine smell.” She whips out a fry pan, adds some oil and throws in a few slices of ginger. “Now, stir-fry the bull penis until it’s half-cooked. The ginger will mask all odours.” She dries the bull penis with a piece of paper towel and tosses it in the frying pan. The smell of cooking starts to whirl around in the kitchen. “Oops, I forgot the cooker hood.” She jabs a switch on a wall and the steam gets sucked away by the whirring fan in the cooker hood. After stirring the contents in the pan continually for ten minutes, she uses a pair of chopsticks to pincer the bull penis and tosses it into the pot. She puts the lid on, takes off her apron and says, “Come, let’s wait in the dining room. Let it simmer for about twenty minutes for it to be cooked.”

For half an hour I chat with Madelyn about her plans while in KL and about her forthcoming cookbook before she enters the kitchen and brings out the soup. I swallow the first spoonful and my senses heighten. It has a herbal flavour and I drain the whole bowl in a jiffy.

“How’s the taste?” Madelyn clasps her hands together and leans forward against the table. “Is it delicious?”

“Refreshing and flavourful.”

“But how do you feel?” She flutters her eye lashes and purses her red lips. “Any sensation?” She winks.

I feel my face turning hot from embarrassment. “No, nothing,” I say, smiling sheepishly. “Maybe the soup's effect will work later.” I look at my watch. “I better make a move. Thank you so much, Madelyn.” I rise from my chair and grimace at the sudden tight fit at the crotch of my pants.

Masterchef Madelyn offers recipe for chicken cordycep soup to boost women’s fertility

Masterchef Madelyn Miao (left pix), winner of Masterchef Beijing 2013, offers the following recipe for women’s fertility.

Ingredients (for two bowls):
Cordyceps 10 grams
Fresh mushrooms 100 grams
Chicken drumstick 2 pieces
Rice wine 2 teaspoonful
Brands Essence of Chicken 1 bottle
Water 500 ml
Salt and pepper to taste

Method:

Wash the cordyceps and marinate them in rice wine for 1 hour
Slice the mushroom into slivers
Pour 500 ml of water into a pot and add 1 bottle of Brands Essence of Chicken
Add all ingredients into the pot
Simmer until all ingredients are cooked
Serve hot
